Vinifikation The wine was named after the French writer Francois Rabelais. In one of his books, the giant Gargantua builds a church named Thélème, which stands for a new world order. According to the principles of the Renaissance, all people are equal and education for all is considered the key to the future of our society. Revolutionary ideas in 1564. Thelema not only represented a new world order but also paradise on earth. There were no walls, time was not controlled by clocks, and all people were well-clothed and nourished. This wine represents the best that Thelema brings to the bottle. It is an attempt to create a wine that comes close to the feeling and way of life of Thélème. The grapes are hand-picked, destemmed, and fermented in stainless steel tanks. After fermentation, the wine undergoes extended maceration and is then pressed and transferred to wooden barrels for malolactic fermentation. Further aging takes place for 18 months exclusively in new French barriques.
