The wine is clear with a pale straw-yellow color. On the nose, it is delicate, concentrated, and complex, with rich aromas of ripe citrus, fresh pineapple, yellow apple, and subtle hints of vanilla, nutmeg, and preserved lemon. The lime and pineapple aromas of the bouquet continue on the palate with flavors of white peach, apricot, poached pear, and notes of lemon curd, honeysuckle, and burnt caramel in a juicy, balanced taste. The wine is smooth and refreshing, rich yet elegant, with medium body, natural acidity, and subtle oak nuances. Notes of toasted almonds, passion fruit, and crème brûlée linger on a clean, taut finish.

The Hemel-en-Aarde Valley is one of the most interesting places for growing Chardonnay and Pinot Noir in South Africa. Cap Maritime sits enthroned on a ridge that separates the Upper Hemel-en-Aarde appellation from the valley. Here, we strive to produce wines that capture the essence of their origin while representing a style we aspire to. Our Chardonnay grapes come from vineyards in the Upper Hemel-en-Aarde Valley, planted on Table Mountain sandstone and decomposed granite. The climate is cool and temperate, and the parallel mountain ranges allow ocean breezes to blow through the appellation in summer. The 2020 vintage produced small, concentrated berries, which give the wine richness without carrying overly ripe fruit. The resulting wine is characterized by fresh fruit aromas, concentration, and energetic acidity. The grapes were harvested, sorted by hand, and transported in refrigerated trucks to our winery in Franschhoek. A careful selection took place before whole-bunch pressing. The juice settled naturally in the tank for two days before being transferred into 40% small Burgundian 1,200L foudres and 60% new French oak barriques, where spontaneous fermentation began. A light batonnage was carried out during the 14-month maturation period.
