Vinifikation The Barista Pinotage is made from 100% Pinotage grapes from the Robertson region. The grapes were picked at optimal ripeness in mid-February and divided into different batches, which were then treated in various ways. Certain batches were thermovinified to optimize color, then returned to the skins for alcoholic fermentation. Other batches were pasteurized and immediately fermented in oak barrels to achieve the dark, rich coffee aromas. Still other batches were conventionally fermented on the skins, with multiple pump-overs during alcoholic fermentation, and then transferred to French oak barrels to complete fermentation.
