Vinifikation The grapes for our Franschhoek Cabernet Sauvignon are sourced from individual, adjacent vineyards, on deep alluvial soils of the valley floor, and from our own vineyards on granitic soils situated on the slopes around Boekenhoutskloof. The Cabernet Sauvignon and a small proportion of the Cabernet Franc vineyards on Boekenhoutskloof have been farmed organically for 12 years and produce fruit of exceptional quality with each new vintage. This vintage is particularly exciting, as we decided to use even more fruit from these organically farmed vineyards. Franschhoek once again experienced a completely different season to Stellenbosch and the Swartland. Fairly good rainfall replenished all the water reserves, and paired with a high diurnal range, this vintage was considered a viticultural extreme year. The early spring ensured even budburst and good fruit set. Despite the challenging conditions, organic farming was applied to control disease and fungal infections. The 2020 vintage is, in comparison, a ripe vintage for Franschhoek Cabernet Sauvignon, but also very European in elegance, brightness, and perfume. We vinify gently to avoid big, monstrous wines. Grapes were hand-picked into small crates, then sorted by berry selection and careful destemming. Grapes were cold-macerated in tulip-shaped concrete tanks, and fermentation took place at temperatures between 27° and 30°C, with frequent pump-overs to extract flavour, colour, and tannins. Extended malolactic fermentation followed spontaneous alcoholic fermentation in 225-liter barriques. The wine was matured on our OXOline system for 22 months in 80% new, lightly toasted barriques from our preferred coopers, Sylvain and Saury.
