Vinifikation The Boekenhoutskloof Semillon predominantly hails from one of South Africa’s oldest vineyards, planted in 1902 on alluvial soils with high clay content. Further grapes originate from two other low-yielding parcels, also planted in 1936 in the Franschhoek Valley, and regrafted in 1942 onto original rootstock and traditional bush vines. A decision was made to incorporate a small portion of Muscat d'Alexandrie, planted in 1902, to enhance the wine's aromatic profile. The grapes are whole-bunch pressed and spontaneously fermented in classic 225-liter barriques and concrete eggs. Maturation takes place at low temperatures, without sulfur addition, for 14 months in 70% new French oak barriques and 30% in concrete eggs. The oxidative method at low temperatures allows us to highlight the structural elements of our old vine Semillon, creating a wine with a structure that can certainly stand the test of time. The small percentage of Muscat d'Alexandrie is fermented on the skins and matured in clay amphorae.
