Vinifikation The Epilog is our flagship red wine, made from a single vineyard block. The vines are situated on decomposed granite soils in the Stellenbosch Hills. The vinification of the Syrah is as natural as possible. 66% of the grapes were whole-bunch fermented and aged in concrete tanks, while the other 34% were destemmed and vinified in 400L barrels.
