The initial chords give a sense of quiet indulgence, straw, heather, white blossoms and French linen, pineapple, lemon balm, and fresh honey. On the palate the fruits become richer, silken ribbons of peach, apricot, and pear blossoms. A streak of chalky acidity enlivens and toys with the lush fruit that gathers on the mid-palate, ending in an appetisingly mineral saline finish.

Vinifikation A tribute to the lost art of field blending; 16 white grape varieties were planted as bush vines on decomposed shale and granite. The grapes were harvested in two different stages to highlight the variability of the grapes. The fruit was pre-cooled and pressed as whole bunches before spontaneous fermentation began. 100% malolactic fermentation in old 500-litre French oak barrels followed by one year of maturation. The Field Blend then aged for another 4 months in the bottle after bottling.
