Vinifikation This vineyard was planted in 2006 on Cederberg’s oldest farm, dating back to 1790. The elevation of the site is 940m. The clone used is SH22F on R99 rootstock. Sandstone with underlying ferrous soils. Average annual rainfall of 600-700mm. The cold nights (average minimum winter temperature is 3.8°C) that follow the warm days (average maximum summer temperatures are only 22.7°C, but can reach 40°C with heat waves) lead to massive diurnal temperature swings (on average 12°C) and thus grapes with more balanced natural acidity and higher intensity of flavour, colour, and tannin synthesis. The slower phenolic ripening process generally means a much longer ripening period, which helps to preserve acidity and, essentially, the stability of the wines. In winter, the north-westerly winds from Elandsbaai (80km away on the West Coast) bring the rain, and in summer, the cooling south-easterly winds blow from the Ceres plateau. Cederberg Plateau Syrah has tremendous intensity, which means that in the cellar, one has to take one's foot off the accelerator to obtain balanced wines. Due to the higher natural tannin content of the fruit, only 30 to 60% of the fruit was fermented as whole bunches, depending on the parcel. The rest of the fruit was destemmed and fermented as whole berries. Fermentation took place in open-top fermenters and two 1000-liter barrels, with pumping over allowed at most twice a day during the peak of fermentation. All fermentations were spontaneous, using only naturally occurring yeasts. Malolactic conversion occurred spontaneously, after which the wine was aged for 11 months in 1000-liter oak foudres. The wine was bottled without fining to ensure a more complex and authentic expression of the Syrah.
