Vinifikation The Syrah grapes are sourced from three different vineyard blocks in the Stellenbosch district. The first two vineyards are both situated more than 300 meters above sea level and are planted with Syrah clones SH9 and SH22. The soils are predominantly decomposed granite, and each adds its own nuance and complexity to the wine. The third vineyard is situated in the cooler part of Devon Valley on deep Oakleaf soils. The Polkadraai Hills vineyard was planted in 1996 on a south-east facing slope and contributes most of the perfume and spice to the wine. Structure and fruit intensity come from a low-yielding granite soil vineyard in the Bottelary ward, a "mother unit," planted on a north-west facing slope in 2001. The Devon Valley vineyard imparts a distinctive acidity and white pepper to the finished wine. Grapes for this wine were hand-harvested between March 16 and March 23, 2022, at ripeness levels between 24.1 and 25.3° Brix. Fruit was chilled overnight to 8 °C before fermentation. To illustrate the impact of site on the making of a Stellenbosch Syrah, harvested fruit was divided into numerous smaller fermentation batches, with whole bunch percentages ranging from 60 to 75 percent per vessel. Fermentation occurred in tulip-shaped concrete fermenters and in conical 1000-liter French oak fermenters, which were pumped over twice daily. The remaining two conical 1000-liter oak vessels were treated with the "submerged cap" technique to enhance the body and fruit concentration of the wine. All fermentations occurred spontaneously with naturally occurring yeasts. Malolactic conversion occurred spontaneously, and the wine was matured for 11 months in 2000-liter conical Austrian oak vessels. The wine was bottled unfined, ensuring a more complex and authentic expression of Syrah.
