Vinifikation The Aristargos consists predominantly of Chenin Blanc and old vine varieties (Chenin Blanc, Sémillon, Clairette Blanche, and Colombar), with the focus remaining on the granite soils of the Paardeberg. The age of the vines ranges from 1960 to 2013. The grapes were whole-bunch pressed, naturally fermented, and then aged for 11 months in old, neutral French oak barrels. The Sémillon grapes were fermented on their skins for a week before being pressed and aged for a year in a very old 2,500-liter foudre. The Colombar was also skin-fermented (for 5 days) and aged in an old oak barrel. A portion of the Chenin Blanc fermented and matured in a concrete egg. In total, grapes from 21 different vineyards were used, harvested on 28 different days.
