Vinifikation The Tinta Barocca, an old Portuguese grape variety, has a long tradition in the Swartland and therefore historical significance at the Cape. The vineyard, with its bush-trained vines (gobelet system), was planted in 1974 on weathered granite near an old railway line (hence the name) and yields a deep-colored red wine with fresh acidity and all the attributes of a great wine. Normally, Tinta Barocca is a popular blending partner. The very delicate skin of the Tinta Barocca is highly susceptible to sunburn, but in this case, the old bush vines with their canopy provided an excellent framework to protect the grapes from the intense sun. Tinta Barocca has the structure of the Nebbiolo grape and the aromatic profile of Syrah, a magnificent combination. It produces wines of great character and expression that are long-lived. The grapes are fermented with 50% whole clusters and 50% destemmed. Fermentation lasts 25 to 30 days before the wine is pressed. Due to the high tannin content, only buckets are used during fermentation, as the grapes are prone to over-extraction. Matured for 12 months in old wooden foudres.
