Vinifikation
The grapes come from a 19-year-old vineyard planted on deep granite soils in Firgrove, Stellenbosch. The Firgrove vineyards are located between Somerset West and Stellenbosch at the foot of the Helderberg, approximately 6 km from False Bay. The unique soils were formed around 500-550 million years ago; this "coffeestone" is a fusion of mineral elements from decomposed granite and the porous layer in the soil, providing good water and nutrient qualities. Beneath this, we have partially decomposed granite in the form of saprolite. This subsoil, into which the vines push their roots, is the "Tough Times Bank," where the vines slowly access water and nutrients in the second half of the season as the soil dries out. The ocean, with views of False Bay from Hangklip to Simonstown, ensures slow ripening and sustained wind control, leading to an overall terroir effect of small grapes with concentrated berry flavors and fully structured yet ripe tannins. This Cabernet Sauvignon was aged for 24 months in 300-liter French oak barrels, 85% of which were new.
