Vinifikation The farm is situated in the foothills of the Simonsberg in the Paarl region of the Western Cape and encompasses a variety of slopes and terroirs. Of the 31 blocks currently planted, each is tended according to its own unique potential, respecting the natural cycles of the vines. A vineyard program of five hectares per year is being implemented to reach a total of 60 hectares, planting harder rootstocks and new varietal clone selections. The 145-hectare property reverted to local ownership when Glen Carlou was bought by a South African family consortium in 2016. While the management team has largely remained unchanged, the enthusiasm for the coming years is carried by the new winemaker Johnnie Calitz. The grapes were harvested from 15 different parcels and kept separate throughout the winemaking process. Each batch was fermented in Water-Bent® French barrels, divided 25% each between first, second, third, and fourth fill. Further barrel aging lasted 11 months.
