Vinifikation Since 1992, Cap Classique has been the South African designation for sparkling wines produced using the traditional method. The family-owned winery Graham Beck has been achieving worldwide success since its establishment in 1983 and is equipped with two state-of-the-art cellars. Each bottle is bottled in-house to ensure that the wine loses none of its quality from grape to final product. The Cap Classique Brut is made from 43% Chardonnay grapes and 57% Pinot Noir. Both grape varieties, ripened in Robertson in the vineyards of Graham Beck Estate, are hand-picked, pressed, and then fermented. The processing is done separately – the two varieties are only blended together in the base wine for secondary fermentation. After the second fermentation in the bottle, the Cap Classique remains on the lees for 15 to 18 months to develop its persistence and creaminess.
