Vinifikation A sparkling wine made using the Cape Classique (MCC) method from this traditional winery in the Franschhoek Valley, whose roots date back to 1694. As with its Champagne counterparts, the second fermentation takes place in the bottle for at least 9 months. The Chardonnay lends this Cape Classique its elegance, while the Pinot Noir gives it character and intensity. A fine perlage and good length characterize this wine.
