Vinifikation The wine was made using a minimalist approach to best express our granite soils, which are part of our unique terroir. Using only free-run juice, natural fermentation took place in barrel. The wine matured for 9 months in 50% new French oak barrels. Clara Sauvignon Blanc is made from a selection of the best 10 barrels from 6 individual vineyards, allowing for a limited production each vintage. In our quest to express the true typicity of Sauvignon Blanc from our terroir, we have selected six of our top-performing vineyards and divided them into individual blocks. At an elevation of 260 to 300 metres above sea level, each block displays different characteristics. During winemaking, the blocks are kept separate to allow their unique characteristics to unfold. Each barrel is evaluated individually, and only the best are selected for the Clara Sauvignon Blanc assemblage. Named after Clara Eliza Hussey, an American heiress from Pittsburgh who acquired Klein Constantia in 1913. She and her husband Braam de Villiers epitomised hospitality – their garden parties were legendary – and under their leadership Klein Constantia reached new heights as "an incomparable estate, rich in memories of the past."
