Vinifikation The grapes for this Pinotage primarily come from Stellenbosch and Durbanville. After harvesting, the grapes were destemmed, and half of the wine was fermented in open-top concrete tanks with regular punch-downs and pump-overs to extract tannins and color. The remaining half was fermented in closed stainless steel tanks with regular pump-overs. The wines were pressed before complete alcoholic fermentation to ensure soft tannins and avoid over-extraction. The Pinotage was aged for 12 months in used oak barrels.
