Vinifikation The average cold temperatures during the day and night increased the fruit acidity and grape quality of the Chardonnay. The Chardonnay was planted in the limestone-rich soils of Robertson, which ensured a beautiful fruit expression. For the Pinot Noir, the cold weather in October and November led to smaller berry sizes, resulting in better fruit concentration. The Pinot Noir was grown in cooler locations in False Bay, which contributed to its fresh acidity. The grapes were hand-picked early in the morning and whole-bunch pressed. Only the free-run juice was used, and the two grape varieties were vinified separately in stainless steel tanks. During the secondary fermentation, the MCC matured on the lees in the bottle for 10 months. After remuage, the non-vintage Brut was disgorged and a dosage of 8.4g/l was added.
