Vinifikation
The Pinot Noir vineyards in Altima (Elandskloof) are unique in South Africa due to their high altitude and the "posted vine" (stok-by-paaltjie) method used. The L'Ormarins vineyards are located on moderately to steeply sloping hillsides at an altitude of 178–188 m. Here, soils of decomposed granite and alluvial sand dominate. The Chardonnay vineyards in Rooderust grow on calcareous slate soils with a high clay content, offering excellent drainage and water retention properties. Both grape varieties for the Anthonij Rupert L’Ormarins Brut Classique are pressed separately and undergo primary fermentation in stainless steel tanks. After bottle fermentation, the wine matures on its lees for 2–4 years before disgorgement. The sparkling wine then ages for another three months in the bottle.
