Vinifikation Rooted in the oldest viticultural soils in the world, consisting of decomposed granite on the higher slopes of the Helderberg, a site that has proven itself to be a Grand Cru site. This vineyard enjoys the refreshing cool breezes of False Bay (Atlantic Ocean) during the day and cool night air flowing down the mountain, leading to even ripening and good natural acidity. The macroclimate is maritime with cold winters and sunny, warm summers. This wine is made naturally and biodynamically, using no commercial yeasts, enzymes, or fining agents. It is also neither filtered nor cold-stabilized and may therefore show harmless deposits over time. The grapes were carefully hand-sorted before being naturally fermented for 18 to 20 days and hand-pressed. This wine matured for 18 months in 50% new and 50% second-fill French oak barrels, with an additional 12 months in the bottle.
