Vinifikation Donovan Rall's flagship wine, the 2024 Rall White, is another beauty. The Chenin Blanc, Verdelho, and Viognier blend reflects the times and the trend towards more precise, age-worthy white wines. Early on, it was primarily about more structured wines, similar to the older vintages of Palladius. 2017 was the first vintage where Chardonnay was removed from the blend in favor of a higher Verdelho content. It is an amazingly versatile grape and Donovan's secret weapon. It increases the acidity by at least one gram and does not undergo full malolactic fermentation, so it is beautifully crisp without losing texture. The components are aged separately, the Verdelho and Viognier in 500-liter barrels and the Chenin in used barriques. No new oak is used at all.
