Vinifikation Unirrigated bush vines on sandstone soils at 704m above sea level. The days are extreme, the nights cool and the Grenache feels very happy there. We have been working with this site since 2011; the canopies are more open today as we seek more filtered light, but the vineyard continues to deliver good results. The grapes are carefully sorted as whole bunches at the winery, with about 10% excluded from year to year. Spontaneous fermentation takes place in a combination of conical fermenters and open-top fermenters, with 20% of the fruit left as whole bunches. After 2 weeks, the fermented grapes are pressed in the basket press and then aged for 10 months in foudre and older 500L barrels.
