In the glass, this single-varietal Cap Classique presents itself in a subtle, pale pink with a finely swirling string of the tiniest bubbles. Traditionally, rosé Champagne is made from the two red grape varieties Pinot Noir and Pinot Meunier. The grape variety of this unusual Cap Classique, however, is Shiraz. It offers a bouquet of complex aromas reminiscent of raspberries, exotic fruits, and rose water. On the palate, the velvety texture, fine perlage, and long finish are convincing.

Vinifikation
Genies are rich in Arabian folklore and are best described as volitional spirits formed from smokeless fire. Able to harness their power to create either magic or mischief, Genies were popularised in the tales of One Thousand and One Nights. Traditionally, Rosé Champagne is made from two red varieties namely Pinot Noir and Pinot Meunier. With Silverthorn The Genie we broke the rules. Embracing the volitional spirit of the Genie we opted for something much bolder and more exotic and used Shiraz, an ancient grape variety from Persia. We are delighted to report the results were pure magic! The Genie was hand-picked in the early morning hours. The grapes were whole bunch pressed at a very low recovery rate of only 550 litres per ton - this extracts no bitter tannins and results in the juice having a beautiful pale purple colour. The colour gradually develops into a salmon pink. Fermentation occurred in a stainless steel tank at 15 degrees Celcius. Secondary fermentation occurred in the bottle and the wine spent a minimum of 15 months on the lees, after which it was manually riddled and disgorged.
