In the glass, this classic Cap Classique presents itself in a bright straw yellow with a finely swirling string of the smallest bubbles. Complex aromas of roasted almonds, marzipan and delicate notes of strawberries and cherry compote, followed by spicy citrus notes. Dry, complex and full on the palate, with fine brioche notes and soft creaminess.

Vinifikation Jewel Box is inspired by our ethos of African synergy, marrying old European heritage and knowledge with our modern African environment and culture. The sheer magnificence of the stars gazing down on innumerable camping expeditions in Southern Africa has left a wonderful, indelible memory. To lie in an almost trance-like state observing the regular outbursts of shooting stars, the unending traffic of satellites and the slow shifting of constellations over time, is truly incredible. To complete our trio, the aim with the Jewel Box was to craft an MCC with an emphasis on richness, opulence and complexity. The inspiration for this style was to be two of my absolute favourite champagnes, namely Krug and Bollinger. Grapes were hand-harvested and whole bunch pressed to yield a maximum of only 550 litres per ton. Fermentation of the Chardonnay was split between stainless steel tanks and old French oak barrels, whilst the Pinot Noir was fermented in stainless steel tanks only. This creates the foundation for complex building blocks critical to the final assemblage. Another technique of utilising a reserve portion of Chardonnay, which has spent 12 months in old French barrels, also adds a very interesting blending component. The final blend consists of 71% Chardonnay and 29% Pinot Noir. The wine spends a minimum of 41 months on its lees to develop optimum complexity.
