Vinifikation For South African winemakers, producing a good Pinotage is always a special challenge. Pinotage places particular demands on the quality of the vineyards and the skills of the winemakers. In the Private Collection, the wine should have great intensity and depth, and the art lies in taming the Pinotage grape variety so that it doesn't become too harsh and dry. Perfectly ripe grapes are therefore an important prerequisite. This is ensured by grapes from Spier's own vineyards in Stellenbosch, where no more than 50 hectoliters of Pinotage per hectare are harvested. The grapes are hand-picked to reach the cellar undamaged and without oxidizing. The Private Collection is made only from the best parts of a vineyard. Fermentation, after a short cold maceration, takes place partly in open containers. After that, the wine matures in a mix of French and American oak barrels. American wood particularly emphasizes the bright and intense sweet fruit of Pinotage and accentuates the character of this grape variety in a special way.
