Vinifikation The 2016 growing season began with below-average rainfall in the growing regions. Although average temperatures remained ideal in spring and early summer, the lower water levels in the soil resulted in small berries with concentrated acidity and tannin. Careful canopy management led to more sun exposure for the grapes to improve skin thickness for higher extraction and intensity. Selecting the right harvest time was crucial for optimal ripeness and balance of the sugar-acid ratio. The grapes were hand-picked before being destemmed and hand-sorted (to remove green, pink, and raisin berries). Fermentation in tanks lasted up to two weeks. Malolactic fermentation and aging took place for 16 months in 90% French and 10% American 300-liter oak barrels (half first-fill, half second-fill). The wines were crafted individually to give each variety the undivided attention it needed, ensuring that the unique characteristics of the varieties and the expression of the site were fully showcased. Selective barrel tasting determined the composition of the blend.
