Vinifikation Every vintage of the Spier Frans K. Smit Red is a work of art. The vines for this blend of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot are all sourced from the western and northwestern slopes of the Helderberg in Stellenbosch. There, decomposed granite soils retain water well, leading to slow ripening and increased mineral complexity. The area also benefits from the cooling influence of the nearby Atlantic Ocean. The winegrowers invest a great deal of time and care into every single vine. After being hand-harvested and carefully packed into small 10 kg crates, the berries are hand-sorted, crushed, and pumped into a mixture of 500-liter barrels and small steel tanks, where the juice remains on the lees for 3–6 weeks. The wine is then transferred into small French oak barrels for a maturation period of approximately 24 months. Winemaker Frans K. Smit, for whom the wine is named, selects the best blends from the barrels, which then continue to mature in the barrel for a further 6–8 months. Every barrel of this limited, internationally sought-after red wine is personally crafted by him.
