Vinifikation The Brut 1682 Pinot Noir is made using the traditional French method and carries the Méthode Cap Classique designation. The grapes were hand-harvested at low sugar levels of 18.5° - 19° Oechsle and pressed as whole bunches. The juice obtained is low in phenolics, rich in natural acidity, and has a delicate pink color and a subtle strawberry flavor. The juice ferments with a strong yeast strain to become the base wine of the MCC. Once the base wine is stabilized, it undergoes a second fermentation in the bottle with a crown cap. This second fermentation produces the carbonation (or mousse) of the MCC. After fermentation, the wine was aged on its lees for at least 15 months.
