Vinifikation The Black Swan Sauvignon Blanc is an assemblage of the two best Sauvignon Blanc vineyards on Steenberg and the best grapes of the vintage. The grapes were destemmed/crushed and left on the skins for 18 hours at very cold temperatures, which gave it a more intense aroma. The juice was then allowed to rest for 2 days before fermentation began. A slow and cold fermentation resulted in a fresh but full-bodied wine. The wine was aged on the lees for 9 months before being stabilised and bottled.
