Vinifikation The grapes for the Stellenrust 57 Barrel Fermented Chenin Blanc come from 57-year-old Chenin Blanc vines that thrive on the hills of the Bottelary Hills, which are part of South Africa's oldest wine route. The juice of the grapes was left to settle for several days without the addition of enzymes. The juice was then transferred to a special selection of barrels and left to natural fermentation. The fermentation lasted for 8 months, after which the wine was left on the lees for another month. The wine was aged for 9 months in oak barrels (90% French oak and 10% Hungarian oak).
