Vinifikation Nastergal is dominated by Tempranillo, a Spanish grape variety known for producing large, powerful wines. The Tempranillo is sourced from slate soils that grow along the Berg River in Wellington, which provide great backbone and ageing potential. To balance the power of the Tempranillo, it is blended with ripe Alicante Bouschet grapes rooted in the deep red soils of the Stellenbosch mountains, contributing spicy aromas and intense colour. Small parcels of Touriga Nacional, Souzão and Touriga Francesa, also from the Stellenbosch mountains, complete this unique wine. The different grape varieties are fermented separately in open fermenters, with a small portion as whole grape bunches. After pressing, the wine is aged for 11 months in used French oak barrels.
