Vinifikation Khakibos is an unusual assemblage of Verdelho, Chenin Blanc, Palomino, Alvarinho, and Fernão Pires. The Verdelho is grown on koffieklip-rich soils, valued for their good drainage and located on the lower slopes of the Helderberg. The Chenin Blanc comes from an exceptional vineyard in Paarl, the Palomino from the Piekenierskloof on sandstone soils, and the Fernão Pires from the gravelly soils along the Breede River. The grapes for Khakibos White were gently whole-bunch pressed and allowed to ferment naturally in old French oak barrels. After fermentation was complete, the wine matured on its lees for 9 months before being blended and bottled unfiltered.
