Vinifikation Khakibos is an unusual assemblage of Verdelho, Chenin Blanc, Palomino, Alvarinho, and Fernão Pires. The Verdelho is grown on koffieklip-rich soils, which are prized for their excellent drainage and anchored on the lower slopes of the Helderberg. The Chenin Blanc comes from an exceptional vineyard in Paarl, the Palomino from Piekenierskloof on sandstone soils, and the Fernão Pires from the gravelly soils along the Breede River. The grapes for the Khakibos White were gently whole-bunch pressed and left to natural fermentation in old French oak barrels. After fermentation was complete, the wine matured for 12 months on the lees before being blended and bottled unfiltered.
