Vinifikation The grapes were destemmed before running over a sorting table to remove any unwanted material and then direct-mashed into tanks. Initially, cold maceration takes place for up to 5 days before fermentation spontaneously begins in stainless steel tanks and wooden fermenters (foudres). Until the end of fermentation, the grapes were pumped over, racked, and the cap punched down twice daily to extract. After fermentation, the wine remained on the skins if quality and tannin profile justified it. The wine was transferred to barrels for malolactic fermentation, after which it was racked, sulfured, and returned to barrels for further aging. The Red Blend aged for a total of 22 months in 62% new French oak, the remainder in older French barriques. During storage, the wine was racked five times from barrel to barrel. It was then bottled in January 2013 after a light egg white fining and without filtration.
