Product Description:
One of the most beautiful aspects of this wine is its amazingly brilliant gold hue. The aromas are intense with notes of quince jelly, green fig jam with a hint of lemongrass, and the clear spicy notes of the botrytized grapes. The wine enters the palate with a sweet honey character that evolves into that of dried grapes, figs, apricots, and quince. All of this leads to a finish that is by no means sweet and cloying, but surprisingly dry with a slight grip of tannins that help give the wine a beautiful finale.

Vinifikation This wine is made from 100% botrytized Sauvignon Blanc, sourced from the highlands of Elgin. The grapes were delivered to the winery and stored overnight directly in cold storage to lower the temperature to approximately 4 degrees Celsius. The grapes were crushed and cold-macerated for 24 hours, then fermented in 25% new French oak barrels. Fermentation on the skins lasted for 4 days before the grapes were pressed and fermented for another 3 months to naturally achieve a perfect balance of sweetness, acidity, and alcohol.
