Vinifikation The vines grow 400m above sea level on granite soils on a terraced slope with a 35% gradient and a north-south orientation for uninterrupted sunlight exposure. The Cabernet Sauvignon is a CS1 clone grafted onto a 17-year-old 99 Richter rootstock, the Merlot is a 347 clone, and the Malbec is an M279 clone. Both clones are on a 99 Richter rootstock. Hand-picked into 15-kilogram crates, using NDVI (Normalized Difference Vegetation Index) images to aid in selecting areas with homogeneous ripening. Brought to a cold room overnight and sorted twice with a mechanical Pellenc sorting machine, followed by a further sorting of individual berries on a vibrating table. Transferred by gravity directly into the tank, where 30% whole berries and 70% crushed berries underwent a four-day cold maceration. Whole-bunch fermentation leads to a red fruit character that tempers the black fruit character of normal fermentation, resulting in a full spectrum of flavors. The Telos is fermented with natural yeasts and regular pump-overs, followed by a 1-week post-fermentation maceration on the skins. The wine is pressed in a basket press, and only free-run juice is used. The individual press fractions undergo spontaneous malolactic fermentation separately and are aged for 22 months in oak barrels. The blending takes place 4 months before bottling.
