Vinifikation Made from a low-yielding bush vine on the Simonsberg. The grapes are hand-picked and sorted in the cellar into stainless steel tanks for fermentation. For the first 3 days, the grapes are pumped over every 2 hours and then pressed early to complete the fermentation without the skins, resulting in a finer tannin structure. The wine is then transferred to French oak barrels for 14 months of maturation (23% new oak) before being filtered and bottled in August 2023.
