Vinifikation Each grape variety was harvested, destemmed, sorted and crushed separately in tanks. Depending on the tannin structure, the wines spent between 20 and 40 days with three or four pump-overs per day and were then transferred to barrels and tanks for malolactic fermentation. After completion, the wine was aged for a period of 27 months in French oak barrels (60% new oak was used) before a strict selection process was carried out, in which only the best barrels from the best blocks were selected. The wines are blended together and naturally clarified before being bottled in September 2018.
