Vinifikation Each component was harvested, destemmed, and hand-sorted separately. Alcoholic fermentation took between 7 and 21 days on the skins, depending on the tannin structure, with three to four pump-overs per day. Once fermentation was complete, the pomace was pressed, and the wine was transferred for malolactic fermentation in barrel and tank. Once fermentation was complete, the wine matured in French oak barrels (34% new wood, 47% second fill, 14% third fill, and 5% fourth fill) for 20 months before the best barrels from the best blocks were selected. The components are assembled, and the wine is naturally clarified before filtration and bottling.
