Vinifikation The Pinotage is an assemblage of two different vineyards, both situated on granite soils in the Paardeberg region. The grapes are 90% from dryland bush vines planted in 1973 and 10% from younger dryland bush vines, growing at an altitude of 350m above sea level. Each vineyard was harvested twice, giving us berries with different characteristics. This, in turn, gave the final assemblage more character and depth. All grapes were hand-picked early in the morning, packed into crates, and stored in a cold room for 24 hours. The next day, the grapes were sorted and transferred to open-top fermenters - 15% whole bunch, the remainder as whole berries - where they underwent a three-day cold maceration before natural fermentation began, aided by one punch down per day. Once fermentation was complete, the wine remained on the skins for 12 days before being pressed and transferred to a combination of old 300-litre and 500-litre barrels. The vintage was then allowed to mature for 10 months before being blended and bottled.
