Vinifikation
Synergy can be called one of the original Cape Blends in South Africa, partly because it was the first wine to carry the term Cape Blend on its label. This blend generally delivers more than enough in all aspects and has helped to solidify Beyerskloof's reputation among wine drinkers as a producer of quality red wines. This Cape Blend combines the structure of Cabernet Sauvignon, the fruitiness of Pinotage, and the softness of Merlot, bringing the different varietals together to create a unique balance for the vintage. Alcoholic fermentation takes place for 5 to 8 days at 25 °C in open fermenters, with regular punch-downs. After malolactic fermentation, the wine matures for 12-14 months in 5% new and 95% used French oak barrels.
