Vinifikation The grapes come from various vineyards in the Elim district. All vineyards are trellised and laid out to maintain a perfect balance between leaf cover and yield. Most of the soils are schist-based and have medium potential. Due to the cool conditions, low fertility is maintained, resulting in a yield of approximately 6 tons/ha. The soils in the Elgin area are deeper, with higher fertility potential and a yield of about 8 tons/ha. The grapes were harvested at 20 to 22 degrees Oechsle. The wine was given 16 hours of skin contact. Fermentation took place at approximately 14 degrees Celsius. The wine was racked off the gross lees and left on the fine lees for 5 months, followed by blending.
