Vinifikation Donovan Rall’s flagship white, the 2022 Rall White, is another beauty. The Chenin Blanc, Verdelho, and Viognier assemblage reflects the times and the trend towards more precise, age-worthy whites. In the early days, it was more about structured wines, similar to the older vintages of Palladius. 2017 was the first vintage when the Chardonnay was removed from the blend in favour of a higher Verdelho component. It’s an amazingly versatile varietal and Donovan’s secret weapon. It ups the acidity by at least a gram and is not fully malolactic, so it is beautifully crisp without losing texture. The components are separately vinified, the Verdelho and Viognier in 500-litre barrels and the Chenin in used barriques. There is no new oak used at all.
