Vinifikation After harvesting, the grapes are destemmed, sorted, and placed in stainless steel tanks. There, the must is fermented with regular pump-overs. Malolactic fermentation takes place in French oak barrels, and the wine then matures for 18 months in French oak barrels, 30% of which were new.
