Vinifikation The vines come from vineyards in Raithby, Firgrove, and Jonkershoek. The "Reserve" status is only granted if the grapes and the resulting wine meet exceptional quality standards. Hand-picked grapes from older, lower-yielding vines are used. Fermentation takes place with a selected yeast strain at a controlled temperature. This is followed by an extended maceration period of 10-14 days. The wine is then pressed and transferred to barrels for malolactic fermentation. The Reserve Cabernet Sauvignon matured for 24 months in 70% new French oak barrels.
