As natural as possible – with promising wines.
At Thistle & Weed we like to keep things simple to best express the story of each vineyard. Inspired by the often overlooked thistles and weeds in vineyards, each wine is dedicated to one of our favorite pests. We use the colloquial Afrikaans term for each wine to remind us that these wines are unadulterated Kaaps.
For our white wines, we use whole cluster pressing and natural fermentation in older French oak barrels to preserve the freshness and purity of the fruit.
For our red wines, we opt for a combination of destemmed whole berries, crushed berries and whole grapes fermentation in open tanks and aging in older French oak barrels.
