Vinifikation A great advantage of our long-standing relationship with the grower, who mainly grows apples, is that we receive a truckload of chilled grapes early in the morning. The grapes are pressed and transferred to tanks, where they undergo cold maceration for 36 hours. Only the clarified juice is fermented in stainless steel tanks, where a long, cool fermentation promotes the development of a full spectrum of flavors. The wine does not undergo malolactic fermentation, which further enhances its freshness, while a 6-month aging period "sur lie" adds a rich element to the palate.
