Vinifikation Big Easy is the nickname of golf pro and Tiger Woods vanquisher, Ernie Els. His top restaurant in Stellenbosch also bears the same name. It was there – and only there – that the "Big Easy" wine, aged in French and American oak barrels, was offered since its opening in 2008. The robust wine became so popular that Ernie Els decided to make it known far beyond South Africa's borders. The grapes come from the Helderberg region, partly from various regions in Stellenbosch, and from Wellington. The grapes were hand-picked in the early morning. On the sorting table, all excess stems and inferior berries were carefully removed. The grapes were gently destemmed and lightly crushed with a Bucher destemmer. Fermentation took place in open stainless steel tanks, with yeast WE 372 added to the juice. The wines were pumped over and punched down by hand 5 times a day to ensure maximum color extraction from the skins. After primary fermentation, the maceration time was 10-16 days before pressing. Each variety is aged individually in oak barrels (micro-vinified) before being blended and finally bottled. In total, the wine aged for 14 months, 80% in 300-liter French oak barrels and 20% in 300-liter American oak barrels.
